Gem-Quality Mozzarella
February 1st, 2010Hand me the Loupe
I have to quit listening to readers.
Reader HTRN mentioned certified San Marzano tomatoes, so I had to get out and drive and buy some.
Now Mike has recommended yuppie mozzarella sitting in water, and HTRN seconded him. So of course, I had a moment of weakness and bought some.
I paid $3.29. Not so bad, right? Wait. The label…can that be right? It says “1 3/4 oz.”
Arrgh.
I didn’t want enough for a whole pie, but that’s insane.
I did more research on San Marzano tomatoes. If you look around on the web, you can get La Regina brand in a #10 can for between four and five bucks. Of course, you have to pay for delivery, and you have to buy a case.
Pizza nuts claim La Regina is the best. They also say that if you get Cento, you want the ones with “Italian” below the picture on the label. I was not able to find those.
There is also a tomato known as La Bella, which is a San Marzano type, grown nearby. It gets good reviews.

“In any case, there is no way I would use it, unless somebody gave it to me.”
“So of course, I had a moment of weakness and bought some. ”
Next is buying the pizzeria and putting some saints to work.

You know dude there are tutorials all over the internet about making your own mozzarella. I don’t know why you haven’t done it yet, given your perfectionist bent.

It’s really good, but I wouldn’t use it either – I can’t afford to blow 20 bucks making a pizza.
