Pints of Pain

In case you’re interested, my chili recipe yields a little over seven pints. I filled seven Ball jars, and I had enough left over for a tiny snack.

I hope this works. Imagine the convenience of having truly phenomenal chili in a jar.

Mike called while I was cooking. He’s all upset now, because he has no canning technology. He wants to make his grandmother’s spicy pickles. I told him about Goodmans.net.

My Ball Blue Book arrived today. It’s the Bible of canning. Well, it would be. If we canners didn’t already have real Bibles to cling to bitterly.

I made these pints mild (by my standards), so I could donate them to my dad. The next seven are MINE, and they will probably melt their own lids.

    Nothing like a GOOD bowl o’ chile, for sure. I like to (cheat) & use Wick Fowler’s 2-alarm chile kits, but my Publix stopped carrying the kits. The St. Augustine store still does, I think. There used to be a product line called Pecos River Spices that offered great quality ground chiles and other Southwestern type spices, but, alas, they are no more. Sis you use the recipe from your cookbook?

    My twin sister is the maker of our Grandma’s crisp, sweet pickles in our family. I asked her what her secret was for the the crisping. She uses pickling lime, just like Grandma did, she first spent a lot of money ordering online, then found it on the shelf of canning goods in the grocery store, but only in “canning season.”
    Hers really are just as crisp and crunchy as Grandma’s and she was a great pickle maker.

    Soon, everyone will be looking forward to receiving your canned goods, Steve. People actually give me things to can and give away, if they get a couple of jars. I recently mailed jams and spreads to Afghanistan with store-bought bagels, muffins and breads. Best care package ever!
