Christmas Grub

This was amazing. I added this and that to the crust and topping, and it was even better than usual. I can’t believe I put this recipe in my book. The general public does not deserve this.

And here’s the prime rib. The horseradish sauce was glorious. Much better than the whipped cream version I tried last time.

    I should take a lesson from you and simplify my cooking for the holidays.

    I did a Smithfield Ham Shank end with a custom glaze, two cheese Mac & Cheese, Cornbread Stuffing, Green Beans and Cranberry Compote for seven diners and it took nearly four hours and we were finished at the table in 45 minutes.

    Of course I made twice as much of each dish as was needed.

    Our Christmas dinner at my parent’s house was better than it had to be.

    To feed twelve they bought two choice grade jumbo rib roasts from Costco. Boneless (a mistake I thought).
    .
    The two 6 lb. roasts were cooked as you described. One was heavily seasoned while the other was not (the way the old folks like it). The ends were cooked well, the middle was warm, rare and red and as juicy and tender as it could be. My slice looked just like your photo.
    .
    No bones? It was much more better than good, especially that outer very well marbled muscle. Just…just…to die for.

    Your post inspired me to hit up Costco for the prime rib they only carry during the holidays. Oh yes, it will be in my belleh.
